Banana Waffles
Here is the recipe I was telling some of you about:
6 eggs
1-11/2 bananas (depending on how much you want the banana flavor)
1 tsp. vanilla
1/4 c. coconut flour
1 tsp. cinnamon
1/4 c. ground flax (the blender works best for this)
1 tsp. baking powder
1/2 tsp. salt
We have made these twice and they are very forgiving. One time I used twice the coconut flour and didn't melt the coconut oil and they were still really good. It just depends on how moist or bread-like you like your waffles. So play with it and find what you like. I bet you could even put in more flax and some kind of milk and not use so many eggs. They also freeze well so you can put one in the toaster on a morning when you don't have much time. I like it for Ethan's constant snacking :>)
If I can get 2 Tbs. of flax down a day, I notice huge hormonal changes for me. Somehow, I don't mind the flax with the banana flavor.
